Ambur Mutton Biriyani

Ambur is a small city in Vellore Districts famous for Mutton Biriyani, Corn (cholam) and Sweets. Ambur is a muslim populatd city and u know how good their biriyani tastes... yummy.. especially the one made in Ambur is delicious...When we travel from vaniyambadi to vellore by bus car whatever means of transport, we stop by ambur to buy biriyani. One more speciality is corn, man they taste awsome... Its a great snack to munch in the car... Still remember the fresh smell of the corn... Lovely food... Here I am gonna share the lovely recipe for Ambur Mutton biriyani.




Ingredients:

Biriyani Ella (Bay Leaf) - 3
Cinamon - 1
Cardamom(Elachi / Elaka) - 2
Onion - 1
Tomato - 1
Mint - 1 bunch
Coriander(Kothamalli) 1/2 bunch
Garam Masala - 1 tsp

Marinate:
Mutton - 1 kg
Yogurt - 4 tsp
Salt to taste
Turmeric Powder 1/2 tsp
Chilli Powder - 1 tsp
Pepper Powder - 3/4 tsp
Lemon Juice - 4 tsp
Ginger Garlic Paste - 1 tsp

Paste:
Cashew Nuts Plain - 20
Jeera - 1/2 tsp
Sombu / Saunf - 1 tsp
Garlic - 8
Chilli Green small - 2

Rice 4 Cups


Preparation:

Mix the ingredients given for marination and keep aside for 1 hour.

Grind the ingredients given in paste to make a smooth paste adding little bit of water.

Heat ghee in a sauce pan and fry the rest of the ingredients in specified order. Now add the marinated mutton, ground paste and 1 cup of water. Cover and cook till meat becomes tender. U can also use cooker for this process. Leave for 1 Whistle.

Once the cooker cools down add rice to the mutton mixture. For 4 cups of rice (1:1.5 ratio), I added 5 cups of water coz the mutton gravy will also have water. Cover and cook for one whistle. Remove from heat.

Serve hot with onion raita and egg...

yummy briyani. looks good. Karaikal Briyani or Selam Biyani yeah but never heard of Ambur briyani. I love mutton, I should try this one of these days.

Hi,

When you say Garam Masala - 1 tsp.

To make this garam masala powder to I have to grind Cardamon, Cinnamon, cloves to make this paste,or do you mean the Garam masala powder available in the market

Also in the ingredients, there is Cinnamon, and Cardamon ( but i don't see cloves). Do we not use cloves here at all?

In addition to cardamom and cinamon i used 1 tsp of store bought garam masala...

We dont use cloves for this recipe..I used sakthi garam masala..I hope this helps!!!

What brand name of ghee do you use?

Or is it just any cows milk ghee...

Sometimes even Dalda, etc is know as ghee....

I use Amul Ghee..which is almost close to ghee flavour we get in India..

I have never used dalda..so no idea about it..

"Now add the marinated mutton, ground paste and 1 cup of water" - Does this mean that you only add the marinated mutton but you do not add the marinate mixture when you fry in the saucepan ?

U just have to add the whole marination not the mutton alone..

I have a question for you Ashwini.
When you say 1/2 teaspoon Cumin. Do you mean 1/2 teaspoon cumin seeds or cumin powder. Also
when you said 1 teaspoon Saunf(Fennel),do u mean 1 teaspoon Fennel powder or seeds.

I notice you cook your rice along with the gravy. I was wondering if you mix the semi boiled rice and gravy and then cover and cook, will it have the same flavor.

I was also wondering if you use Saffron to add flavor.

I meant cumin seeds and fennel seeds, saunf usually indicates fennel seeds..

lemme know if u have any other doubt..

I usually cook rice in gravy which has more flavour than mixing semi boiled rice.

I am yet to post chicken biriyani which is made by dum/mixing semi boiled rice and gravy.

Both biriyani tastes good but i prefer cooking them both together so that rice will have the flavour of the meat..

This is the best Ambur Biryani recipe on the internet. The essence of it was the mutton flavored in the Fennel/cumin combination. Delicious!
I really enjoyed the Birayni. I am from Madras and I can vouch for this Ambur Biryani recipe. Friends try it without thinking twice. You will not be disappointed. Trust me!

Ashwini do you know the recipe for the Madras Buhari Hotel/Paramount Hotel style biryani or any other muslim style biryanis from Madras/Bangalore or down south. I would appreciate it if you could post some of them, as it will be much appreciated.
