Strawberry Muffin

This is my first baking experience. I had lots of strawberries in fridge. I browsed many recipes but changed according to my taste. I learnt many baking techniques from fellow blogger and web sites. The one very important rule is, "Don't over mix the muffin batter"...Small lumps are fine, which makes a small holes in the muffins ( as in store bought ones)...Use fresh fruits to enhance the flavour...It actually turned out very good... I loved it!!!!!

Ingredients:

1/4 cup oil
1/2 cup milk
1 Egg
1/2 tsp Salt
2 tsp Baking Powder
1/2 cup brown sugar
1/2 tsp Vanilla syrup
1 3/4 cup All purpose flour
1 cup Chopped strawberries

Preparation:


Preheat the oven to 375F.

Prepare a muffin tin by oiling it or lining with paper liners (cupcake cups). I sprayed Cooking spray for easy removal...

In a small bowl combine oil, milk, egg and vanilla.Beat lightly and keep aside.

In a larger bowl, combine flour, salt, baking powder, and white sugar.

Toss in the chopped strawberries and coat them with flour.

Pour in the beaten wet ingredients.

Fill the muffin cups with the mixture.

Bake for 20-25 minutes or until toothpick inserted comes clean.Cool for 10 minutes and remove from pan.
