Strawberry Muffin

This is my first baking experience. I had lots of strawberries in fridge. I browsed many recipes but changed according to my taste. I learnt many baking techniques from fellow blogger and web sites. The one very important rule is, "Don't over mix the muffin batter"...Small lumps are fine, which makes a small holes in the muffins ( as in store bought ones)...Use fresh fruits to enhance the flavour...It actually turned out very good... I loved it!!!!!

Ingredients:

1/4 cup oil
1/2 cup milk
1 Egg
1/2 tsp Salt
2 tsp Baking Powder
1/2 cup brown sugar
1/2 tsp Vanilla syrup
1 3/4 cup All purpose flour
1 cup Chopped strawberries

Preparation:


Preheat the oven to 375F.

Prepare a muffin tin by oiling it or lining with paper liners (cupcake cups). I sprayed Cooking spray for easy removal...

In a small bowl combine oil, milk, egg and vanilla.Beat lightly and keep aside.

In a larger bowl, combine flour, salt, baking powder, and white sugar.

Toss in the chopped strawberries and coat them with flour.

Pour in the beaten wet ingredients.

Fill the muffin cups with the mixture.

Bake for 20-25 minutes or until toothpick inserted comes clean.Cool for 10 minutes and remove from pan.

Mango Sambar (Lentil Curry)

Sambar is a authentic south Indian dish for Rice or Idli!!!. No breakfast is complete without sambar. Pongal and sambar is a great combination!!! Idli and sambar is heavenly!!!!. U can use vegetables like Drumstick, Raddish, Brinjal, Okra, pumpkin...etc but I used mango which gives unique flavour to sambar....

Ingredients:

1 cup Toor dhal or Masoor Dhal
1 raw mango
1 tomato
3 pods garlic
1 tsp turmeric powder
1 tsp Cumin
1 tsp Redchilli powder
2 tbsp sambar powder
salt to taste
small lemon size tamarind or 1 tsp tamarind paste

Seasoning:

2 tsp ghee
1 tsp mustard seeds
1 tsp cumin
3 redchillies
curry leaves
Asofoetida
1 small onion or 3 shallots

Preparation:

In a Pressure cooker,add all the ingredients except tamarind. Add 3 cups of water, cover and cook. Leave it for 3 whistles. Remove from heat allow to cool.

Meanwhile soak tamarind in hot water for few minutes. Extract tamarind water from the pulp. ( For mango smabar, they wont use tamarind water. I use it because the raw mangoes we get here is not tangy enough!!!)

Heat ghee in a pan and add the seasoning items one by one. Once the onions become translucent, add tamarind water ( adjust according to ur taste). Allow to boil for 5 minutes. Add this seasoning to sambar. Sprinkle 1 tsp sambar powder, cover and cook for 10 mts. Finally sprinkle coriander leaves and remove from heat.

Serve hot with Rice!!!

Note:

Instead of mango, u can use other vegetable mentioned above!!!
Adjust tamarind, redchilli powder according to taste

Cracked wheat Upma

Cracked wheat is a wheat product made from whole raw wheat kernels which are crushed into smaller pieces. It has great deal of nutrition and fibre, so it is added to healthy diets. U can get cracked wheat from Indian grocers. There are three varieties wheat#1, wheat#2, wheat#3. I prefer wheat#1 coz it will be exactly like rava consistency. U can make different varieties of upma from this cracked wheat. If u are dieting, cracked wheat will be great option to avoid rice. I have tried Pongal, Vegetable pilau, tomato upma ... etc in cracked wheat it tasted very good. Here i am gonna give basic upma recipe!!!

Ingredients:
1 cup Cracked wheat
1 onion chopped
1" ginger chopped
1 tsp mustard seeds
1 cup of vegetables chopped ( carrot, bean, peas, corn etc)
2 Greenchillies
2 tsp oil
salt to taste
curry leaves
11/2 cup water

Preparation:
In a non- stick vessel, pour oil wait until hot. Add mustard seeds, leave it to splutter. Add, ginger and curry leaves, saute for few minutes. U will get wonderful aroma of ginger, add onions and greenchillies. Saute until the onion turn golden color. Add vegetables ( I usually add frozen mixed vegetable) and saute till water evaporates. Add cracked wheat and fry for 5 mts. Pour water to the mixture and mix well. Sprinkle salt, cover and cook till all the water evaporates. Finally u can add 2 tsps of oil but its optional. Sprinkle coriander leaves and serve it with pickle or chutney!!!
